My Valentine

Matt made me a wonderful Valentine's Day dinner as I was studying for my first nursing exam and my political science exam, both happening the next day.  I am so lucky to have such a sweet husband.  He made apricot chicken, delicious rice, a wonderful salad, and we drank raspberry crystal light out of our champagne glasses.  He brought me daisies and roses too.  It was so good!  







The rest of the week has been major studying, with a test coming up on Monday, and my competency for skills lab on Wednesday.  I get to draw up medication, show where i would inject it on a mannequin, and inject it into a pad.  I also get to demonstrate transfer techniques, range of motion, and how to change a sterile wound dressing.  I have spent lots of time practicing, so I hope I do well.  

At young women this week, the laurels (16-17 year old girls) were in charge of the activity.  They planned some object lessons and games for us to rotate through in groups.  They all had to do with service and helping others as God would have us do.  In one room, they had several people in the group hold candles.  One person was given a lighter and lit his candle.  Then he went around and lit the other candles.  As he lit each one, his candle's flame grew larger for a few seconds.  The young woman said that this is representative of how the light within us grows when we help others.  It is so true that when we help others gain faith, our own faith and testimony grow as well.  

Matt is getting excited for his marathon at the end of April.  We ordered some new shoes for him online, and they arrived this week, along with a Nike watch that tracks a bunch of info as he runs.  




He went to a shoe store and got his foot analyzed to figure out how he runs and what type of shoe he needs to support it.  These bad boys have already gone a few miles, and will go many many more.  I am proud of his determination and talent.  I run 2-3 miles and I am happy with myself :)  I will have a lot of fun watching him run.  Haha.

  2. I will send you the recipe! It is from one of our favorite cookbooks we got for our wedding. The cookbook is a bunch of recipes for two people, but we usually double it so we have leftovers :) I'll just copy it out of the book and then you can double or do whatever you want.

    2 medium chicken breasts
    1/2 cup apricot jam
    3 Tbsp lemon juice
    1/4 tsp nutmeg
    salt and pepper

    Place chicken breasts in casserole dish. Mix apricot jam, lemon juice, and nutmeg. Sprinkle chicken with salt and pepper. Spread apricot sauce over chicken. Cover with foil. Bake at 375 for 45 minutes. Remove foil and back an additional 15 minutes. Serve with wild rice.

    The sauce is thick when you spread it on and then gets really thin while cooking. We just spooned some sauce onto the rice too. yum
